Corn chip crusted cod

I've been trying to recreate fried dishes into healthier baked dishes.  For this chicken dish, I used cornmeal to make the crust crispy like it would on fried chicken, but on this fish, I used some smashed up corn tortilla chips along with a little flour and spices.  Super healthy and delicious!!  John told me to put on the post that it was a complete hit with the boys!  :)
Ingredients:
-2lbs. of cod
-1 egg
-1 lemon (zest and juice)
-couple handfuls of tortilla chips (i used multigrain)
-1/2 cup of flour
-pinch of salt and black pepper
-1tbs of dried cilantro (it's mostly for esthetics)
-2 tbs of toasted seseme seeds
-3 tbs of olive oil

Steps:
-preheat oven to 425 deg
-prepare 2 plates for wet and dry ingredients
-zest the lemon into the dry plate
-juice the lemon into the wet plate
-crack the egg into the wet plate
-put the chips into a ziploc bag, seal, and smash!!
-combine the smashed chips, flour, salt & pepper, cilantro, and seseme seeds into the dry plate
-dredge the fish one by one into the wet then transfer into dry
-drizzle the olive oil onto the fish
-place them into the oven for 20 minutes
-enjoy!  (I served mine with herbed potato salad)

  2. I'm a vegetarian, but I will believe you when you say this is delicious :) I have been trying to cook at home more myself... it's so much healthier and cheaper!
